The world is unforgettable, the events are memorable, the story feels involved with the player's character, it drips atmosphere, the writing is occasionally brilliant, and it's jam-packed with shit to do and little details you never notice. Like, if you kill parents in Skyrim, their children go to the orphanage - and the orphanage will expand to include extra beds as more show up.
It's an open world game that has basic life sim elements to it. That's it. So many open world games has the npcs exist exclusively to populate an area when you're in it, if you kill them more will just keep streaming in. If you kill a bunch of NPCs in skyrim the town is now depopulated as it should be. Sure some NPCs are unkillable but that's just because the alternative is the morrowind text box of "Hey this guy was important for something reload your save" which a lot of morons ignored and fricked their saves up in morrowind. The guards will actually talk to and arrest you for committing crimes instead of the GTA kill on sight shit.
Bethesda RPGs are some of the closest games we can get to just a fantasy adventurer life simulator. For all their flaws very few people try to copy the life sim aspect of these games even though it almost certainly could be done far better by some other company.
