The artist Harold McNeil is an open neo-Nazi so it's not surprising WotC didn't want his drawing of a Klan gathering in the game anymore.
Should I make a rat or insect edh deck? Phoenixes also seem cool. I’d be willing to sling $250 towards a new deck if anyone has any cool ideas, Ive already got an upgraded knight precon

Like the other anon, dont worry so much about themed tribals, rather what you want to do. Is it an aggro deck? Token deck, control deck, OTK deck, infinite combo decks, etc etc.
I haven’t played anything with much red and would like to try a very aggressive deck. Graveyard recursion is fun, I also enjoy token spam. I might make two different decks down the line.
Is burn fun?
Depends on what you like, in this game it seems like each player likes a color for their own reasons. I respond more to Green than any color for its mana ramp and big creatures. Burn can be fun, I personally dont engage with it much because it feels like playing blue in the sense that your more negating and engaging with what your opponents doing rather than doing your own thing. Sounds like you might enjoy a Black Red deck. Red for your burn and Black for your graveyard recursion.
I did that with Ngathrad. I remember I went to a store for EDH night, which is basically Weenie Hut Junior. >Turn 1 >Swamp >Dark Rit >garden gnomeeled Lotus for blue >Cast commander and use the left over mana for Sol Ring

Slightly upgraded precons, we’ve only been playing for a few months but we’re all quite into it. I have the march of the machines knight deck and it’s pretty fun. I tried the bright palm 1/1 counter spam deck but the gameplan is so simple it was pretty boring so I sold it.
I made a mech deck. Basically full of vehicles that ride other vehicles and spawn pilots to ride vehicles. Loads of fun, even if it is kinda bad. I've also got a mono colorless eldrazi deck that's just nothing but big lads. It never really works but when they don't get shot down it's fun.
My favorite color is Blue because they rock with knowledge and mechanically I'm drawn to their card advantage and counterspells. But from what I read everyone hates playing against Blue so I don't play MtG much..

I like black and blue most. I like things dying, and I don't like being blocked.

rats will play very linear, not necessarily bad but might get boring after a while
