Not even normalgays play this slow.
I gave up the main file and started new games with some of them being radomized enemies / items

this is exactly what i'm doing , i even got the timing of waterfowl
yet it only takes one hit from her to stagger me to death
To help your survivability since of course anybody is going to get hit eventually, find the dragoncrest greatshield talisman if you don't already have it. Or use a weaker version. It's actually a big boost to damage absorption in PvE. Plus greatjar for more load so you can use more armor while still light rolling.

that's actually a good idea , it raises my defenses by almost 19% and the greatjar talisman does keep me under the light roll threshold

What exactly are you having trouble with? Light roll makes it very easy to avoid waterfowl. Some of her other attacks are harder to deal with imo.
You might want to replace one of your stamina talismans with a dragoncrest for physical resist, vs Malenia it really helps to be able to take an extra hit or two, or just barely be able to survive a failed waterfowl dodge.

you should wear the bull goat armor, it'll massively help with your defense against her mostly physical damage
You don't want to get hit by her or she heals.
yes i know and my ungabunga str/dex/end split build was able to blast her ass into space dual-weilding two axes regardless of her gay little life steal
either that or respec and put 10pts of end into vig, the health will help a lot more than end would at that point

I imagine you're getting oneshot by half of her combos. You should at least upgrade your weapon to +25
i don't want to use those rock cause they're finite

Refund them or get them deleted from your Steam account; those games are all about using every single mechanic available, from ki pulse to onmyo, from living weapon to demon cores.
Someone like you that sees his toolset as "cheese" will have a miserable experience with both games.
I'll put it like this, neither Nioh game has i-frames as cheap as Elden Ring Souls (they exist, but they're extremely limited compared to what From games use) so many times you have to BLOCK and sometimes you have to DODGE. . Not i-frame abuse but actually dodging the enemy's attacks so they don't touch you.

You should get a few more points into vigor, and at 50 endurance, you should be able to wear at least a few more pieces of armor while still maintaining light load.

Malenia is prone to getting stunlocked, just run once she jumps and halts in the air (waterfowl combo)

i have the greatsword upgraded to +24 but i enjoy the zwei poke more even though it's has a better str scaling

My strategy was
Phase 1: jump + strong attack with dial-wielding giant hammers; she staggers and is vulnerable to a critical hit after three or four hits. It's very important to only attack her with a full stamina bar so you have enough energy to escape. I think it's deliberate given how if you run to the other end of the arena she just walks, giving you time to regenerate your stamina.
When she used her anime attack, I just switched to the fingerprint shield and block; she earns health back but the stagger + riposte damages her way more. Repeat until she dies.
Second phase: I just summoned Tiche lol; that phase was just too hard and chaotic to me.
Worked on both NG and NG+.
i unironically found her 2nd phase easier
I also don't want to cheese her with summons or use shields

And don't even bother with non-From games like a Nioh or a DMC game; refusing to use those games' gameplay mechanics won't get you far or will make the experience boring.

All you need to understand to beat her is you can only hit her right after she attacks. Make a habit of instantly running full speed backwards whenever she returns to idle animation, so you are safe in case of waterfowl. The most dogshit boss in history for sure
