If you lose interest, then you shouldn't try to make a huge setting at all, make a small one whit template for future expansions as needed
3.5e plus epic6 plus focus on hirelings and building a kingdom.
They don't level up and get new powers, they get an army.

Palladium Fantasy is the only objectively correct answer for ya to run your grand syatem in
Try Dungeon Crawl Classics, I think that has a good balance of flexibility while still being able to flesh characters out. Also there's lots of tables and you get to use weird dice, it's a fun system with some unpredictable outcomes.
The whole point is to play DnD. I mean dcc is cool and while I've heard many horror stories of palladium I'm sure it's fun too, and I DO play other systems alot, probably more than DnD at this point (and I don't mean Pathfinder) but I'm looking for a solution for my DnD campaigns specifically.
D&D was originally expected to be played with miniatures using chainmail rules, so there's no reason to rule out B/X. Other than that, use GURPS.

So do you actually want one big setting or not?
Because it sounds like you only think you want one but in reality you want to come up with new stuff without going into too much detail. Which is totally fine but it doesn't really lend itself to autistic world building with tons of details.
Just keep doing your thing.
Run your fave version of D&D.
Start with a small corner of the world filled out.
After every session add something new to the world
After each adventure, the time line fast forward one season (as players have to train, do cleric/Magic user things or what not).
If later editions, limit them to lower levels so you don't have to do epic gameplay.
20 sessions later you have a big world map, and its 5 years of history built.

Figure out the kind of game you want and build around that.
