There are not nearly enough games that let you create, customize and actually use your own custom vehicles.

There are tons.
The first ship you get is premade and every other ship you come across is too. They've mentioned being able to steal ships before.
I could create my own ships 30 years ago. Nothing new. Especially when all you have as a game area is the cockpit and none of your 'custom' interiors are accessible. It's just decoration while any game relevant customization happens on a data sheet.

Lmao. And here I took it for granted that the insides of the ship would be accessible. Limiting the interior to just the cockpit removes like half of the reasons for why somebody would want to customize their ship.

Same, I'm really hoping you can set somebody else as pilot and walk around the ship while it flies, the one thing making me fear that might not be possible is that we saw a UI thing pop up that said stand up only after docking with another ship

That would be no different from having the autopilot take the wheel.
Being tethered to vehicles as they move allowing you to move around the interior is one of my favorite designs. If we can move around in the ship and see what basic routines the npc crew performs I'll be happy. I wonder what sort of modding will happen. One of the other things I desire for that type of space interaction is to just have web integrated screens to watch some youtube garbage or browse forums. Create a comfy ship journey watching things as you travel wherever. Although, I'm assuming Starfield won't have super long journeys like Star Citizen or Elite Dangerous so I'd imagine someone would have to make a mod to downscale travel speed.
What would be really cool is being able to load your own MP3s into the game and having them actually come out of your ships speakers so the closer you stand to the speaker the louder the music is, definitely mod territory though

You pick from three choices which gives you a set of 8 or so NPCs in different jumpsuits with generic dialogue that populate a room.

At 10:30 in the gameplay reveal the cockpit comes off and is pulled off center to move it around. Doesn't confirm that it won't be forced into the center somehow but if it absolutely needed to be, the easiest way to do so would be to lock the cockpits movement to the center line.
