I just enjoy developer commentaries. Even for games I've never played. There's a good one from two guys that worked on Escape From Monster Manor.
He was the main coder for it. In other videos he goes over the differences between the 3DO and the Playstation and how they handled 3D since there were some games that were on both consoles.

I don't know of any play by play commentary tracks along with the game but Ars Technica has a host of "behind the scenes" videos focused on games that are pretty interesting. The Crash Bandicoot one was real neato.

yeah and I like his latest happening was he funded a full pitch bible for an alice sequel and submitted it to ea as a last attempt. not even asking ea for funding, but just to let him license the title. and they hit him with the "our IPs are very important to us, so no we will not license it". so now alice is dead dead

Yeah, finding that out right after I played American McGee's Alice for the first time was not a good experience.
