2 isn't, melee combat is not engaging so you end up shooting everything to death. 3 is worth a try but if combat still doesn't click with you after playing that one, abandon all hope, the franchise is not for you.

DMC2 was basically made in 4 months by maximum Japanese sweatshop power because higher ups told Itsuno that he had 4 months after the previous team basically did fuck all. He himself has said it is an unfinished piece of shit due to ridiculous deadlines and incompetence.

The first game wasn't a 6 month rush job to salvage a previous attempt at the game. In a year they'd only made the worst stinger in the series. DMC started as RE3 and then RE4 and then turned into its own thing. It explains all the RE elements but also shows it wasn't a developmental nightmare.
2 has dogshit melee, garbage enemy design, and it's poorly balanced trash. If it doesn't feel good to hit things you made a bad Action game. Simple as.

It raised it., VJ is a game you can beat in a sitting, can perfect it without much training or insane ingame tech. You don't punch mobs off the side of a screen, you don't just frame trap a boss, it's a straight forward game.
Aside from geometry, the only the God Hand has of VJ is customizable combos which is something no other game has really done since.

I was disappointed how little effort went into DSS's scythe and spear modes, secially for a game that already brings so much back from DmC. We could have had a proper scythe with swordmaster but they just had to make it a rebellion reskin.

Balrog is sweet and actually has set stances, Cavaliere and Cerb are like you said, weapons with superfluous 'changes. DSD is just ' more sword ' like any other sword upgrade before honestly.
The weapon forms in DMC5 are the opposite of half-cooked. Each of them is mechanically unique and interacts with its weapon and Swordmaster and the rest of Dante's ability uniquely. The go on a scale where you can use the two buttons/forms simultaneously (DSD) to using them together (Cavaliere) to using them separately (King Cerberus) to having to manually change them (Balrog); you'll also notice the amount of moves per weapon scale similarly, with Balrog having the most moves and DSD having the second least, this is because Balrog's SM is designed specifically so that you not only have to not switch weapons and styles, but not switch modes; notice how SM gives King Cerberus a Helm Breaker variant and Cavaliere a High Time variant, and both of them get a Stinger variant.
King Cerberus alone gets to ridiculous levels when you start looking at how its moveset is designed. Each of the forms has different elemental damages which do less or more damage to different enemy types. The ice form has high style recovery on its combos so you can do two combos in row, the fire form deals 50% of its damage if you're too close, the lightning form causes stun, and all the attacks tied to ice are single target, while those tied to fire are crowd control; simultaneously everything you do with King Cerberus with the basic attack button is single-handed, while the attacks done with Swordmaster are two-handed, effectively giving the weapon the usual "weak" and "strong" attack buttons you see in other games.
Don't get me started on how its model transforms because that will probably not fit in Ganker post.

It's consistent with how it worked in DMC1. Besides if DSS had gottten a unique moveset it would have stopped being a "sword" for Dante and turned into something else, at which point you might as well just get another DA. Not to say that moveset wouldn't have been able to go onto future entries of the series since DSS is gone now. Hell, you only get DSS for two missions anyway (and Rebellion for one), so it makes even less sense to be changing the sword moveset so much.
Funny that you mention the reboot though, since Prop Shredder using the scythe form actually was something they took from it.

I'm not talking lore-wise as much as I'm talking animations. I would be fine with DSS being a simple rebellion reskin (I do understand why it works that way within the game's structure, I understand it but don't agree with it at all, which is why if it were up to me it'd be a KC situation where the entire moveset is moved to basic melee and SM is made something entirely new, in this case an osiris-like scythe moveset, but I digress), but things that should have a "punch" to them (spear at the end of million stab/stinger, scythe prop, scythe round trip) hit like a wet fart. Hell, as far as 1 goes, the sparda animations were better than the ones in 5. 4SE trish's remains the best playable version of sparda imo, and it's not even that different, it just has proper animations.
I suppose that's fair, though it's pretty subjective. For what it's worth all its sound effects are different from those of the other two swords and those attacks do deal more damage, and that affects more of its moveset.
I like it but I'm not hard to please. Though it's still the weakest game in the series.
I'm going through DMC 1 for the first time, I just defeated Griffin. I'm enjoying it but I'm surprised at how easy it is. Griffin is presented as some epic fight with lots of sound and fury, but I beat him on my first try without using any consumables. Devil Trigger + Air Raid is overpowered in this game. It's the "I win" button.
Which griffon fight? you mentioning air raid leads me to believe is griffon 2 (on the pirate ship).
I beat his final encounter in the colosseum last night. The one where he is finished off by Mundus at the end. Air Raid was still the optimal strat in this fight.

I have to admit I haven't used Ifrit at all. I didn't want to spend resources on levelling a new weapon when I could instead use them to buy purple orbs and increase my Devil Trigger Gauge.

My favourite part is that they designed this cool demon tank boss but NO ONE on the team went like "okay but what happens if the player just gets really close so that the turret can't hit him and just starts smacking the tank with his sword" or how in another boss fight absolutely no one went like "the player can just get behind this desk and start smacking the boss on the back of his skull, shouldn't we add something that will punish the player for trying to cheese the boss like that?"

DMC2 is weird for me. Everything people shit on this game for is 100% true and it's objectively a huge step down from the first game and compared to any other game in the series (including the failed reboot) and yet for some reason I still like it anyway. DMC2 really got the look of urban/industrial areas mixed with demonic occultism which is present in 3, 4 and 5 but only for like the first few levels whereas 2 had it going on for most of the game including the final area.
DMC2 is probably the game I want to see get a remake the most because I see so much untapped potential in it. Sad it'll never happen though.

That's about it. 2 actually has plenty of lore that is entirely self-contained (bolverk fought sparda, argosax fought mundus, agnus worked for arius, lucia genuinely loves dante, matier and her clan are implied to have demon blood, etc.), but literally none of it matters or is relevant ever again other than that single greentext bulletpoint, which doesn't even come from 2 itself, but from the DMC5 prequel novel. Most things having to do with 2's lore are retroactively added in side content that tries to salvage the game's connection to the rest of the franchise.
