In terms of having the best writing and being the most fun,
Fallout 1 > NV > F2, 3 and 4 are about equal. Tactics I haven't played yet as well as Brotherhood of Steel, but I have heard nothing good about Steel. 76 doesn't interest me since it looks just multiplayer 4 with more butchering of the lore and I don't really play multiplayer games unless it's with friends, though a multiplayer Fallout game is sorta cool I guess, if it didn't have one of the worst launches in video game history.
2 introduced more comedy into the franchise and weird lore and that was the downfall even if it's a good game. The Enclave really are just bad cartoony Nazis that somehow just barely were written well. I still think the enclave are cool and they fit into the franchise, of course, but they're still very basic and not as fleshed out as other factions. Fallout 3 took 2's wacky wasteland hi-jinks, the BOS vs Enclave dynamic, and even the fucking canonization of the fucking aliens, and increased it, a trend that has be continuing with each game with a decay in story, canonization of bullshit things that go against the themes of the franchise (aliens, lovecraft gods, etc) that also contribute to the weakening story. That's why I rank New Vegas over 2, cause New Vegas at least balances the wacky wasteland hijinks (where it has a lot of actually) with complex politics and some of the best and most memorable characters in all of Fallout, even with it's many flaws.
They're some of my favorite games, though I honestly don't have a favorite franchise, I just have many games I really like.
76 is very good nowadays
but i understand why the multiplayer aspect puts you off
I'm sure it is but I treat video-gaming on an equal level with reading a book. If I can't justify the video game as being equal to a book or giving me fresh new ideas for my creative writing, I'm probably gonna not be interested. I also don't like how you can't "complete" multiplayer games. It's like you put a lot of stuff into what's a bottomless pit.
you can definitely complete 76 since there are finite quests and factions within the game
theres like 8 main quests
the problem is there's a lot of daily repetitive tasks and MMO-like events on the map that give you cool weapons or cosmetics
and the rewards are abysmal
most people play 76 for 100 hours to do all the questline and then fuck off
big content updates that add brand new factions and questlines happen once a year
worst quest design of last 2 decades, even korean mmos are way better than 76. it's fallout online made for roblox kids

They went too mainstream with Fallout 4.
Honestly I'm boosting Fallout 3 to above 4 just because how god-awful the dialogue wheel was in Fallout 4. That shit ruined the entire game for me and is probably the real reason the story is so vapid. No more complicated quests with multiple outcomes, you can only agree, agree with more pay, agree (snarky) or do the quest later.
Fallout 2 is alright. Rest is shit.

Fallout 3, 4, and 76 are okay once you realize they take place in an alternate timeline from the original canon (1, 2, new vegas)

i prefer the shooters, but thats just because i prefer shooters. i played 1 and 2 back in the day, but dont really feel the need to return to them. theyre great games, i just dont get that gamer itch for them anymore.

the general style of a game went from eclectic 60' + 80' "we were not able to decide" to something more stylistically defined
well due to lack of funding (vtmb basically killed troika) game was released undercooked but still it was fresh, it was contemporary, it was just better

It's a good setting wasted on mediocre games with mediocre plotlines.
