Dex int is easy mode honestly. Str faith is meh til you can stack up buffs and do your gay in-order combo that usually ends in you doing that dog fricker's sword spell.
Also healing makes the spider kangz homies a joke, like it's pathetic how moronicly powerful it is on them.
Magic is more powerful, Faith is more fun (or at least more visually interesting). Both is also fun though needs a lot into it obviously. Arcane is just an alternate stat option with the same spells.
There are a few spells which require some Arcane but they're just outliers, the game doesn't have a whole school of spells which use Arcane. Between Sorceries (INT) and Incantations (FTH) it mostly depends on what sort of play style you want. Sorceries are very, very focused on attacking and dealing damage. There are a lot of them in a lot of different varieties, but for the most part you can think of them as various ways of shooting magic at a target. There are very few buff/utility spells but there are some as well. There's also a cool branch of melee-ish Sorceries which manifest various magic weapons. Sorceries in general are very, very good at dealing damage.
Incantations have offensive options but there are also a bunch of buffs, utility and healing spells in the mix. The offensive options available early on still do quite good damage but overall I'd say they're a bit clunkier to use than Sorceries, as in they may be slower to cast, or have lower range, or lack target tracking, or require manual aiming to get the most out of them. While Sorceries usually have upgraded versions of the basics which you find later on, on the Incantations side of things this isn't always true in quite the same way, there are some kinda-upgrades for the later game but late-game offensive incants tend to be shorter range AoEs. They're not very practical and can be very slow to cast, but have huge damage potential if you land them against big targets which get ruined by taking multiple hits.
If you just want to deal damage, Sorceries are the better option in practice IMO. You can also get just a bit of FTH to use some healing/buffs and use INT spells to kill shit. That's also very powerful and versatile and you won't give up that much damage compared to dumping all the points straight to INT.
