Both, I'm doing both. Although I don't think trios are worthless, but they're outstayed their welcome. UCOB, WR, and even TEA can make them work. DSR and TOP can't, and it will only be harder to force them if the pattern continues with MSQ > raid > MSQ > raid etc ultimates.

The game is very generous with gear as you progress through the MSQ. As for catching up once you hit level cap, you could just buy some crafted gear off the market board, it shouldn't be too expensive nowadays.
As for endgame stuff, start with alliance raids, then extremes, then savage if you want to work your way up to difficult stuff. Or just jump right into whatever you want, it's not a big deal.
Paladin was recently reworked, I'm not sure how their rotation feels since I haven't messed with it yet. I generally hear good things about it now though.

I personally don't like it very much, since you don't have your distinct Magic and Physical phases anymore there's nothing that makes your Magic feel distinct from your normal attacks, they just feel like another ability in a combo.
The actual rotation isn't bad, it's just a shame compared to how it used to be and the phase swapping gameplay which I enjoyed.

If you're lv90 you can just go buy an endgame set 5mins after you hit max level and you're good to go. If you're too cheap to do that then just get the Abyssos set, you can get it in just a few runs. There is zero gear treadmill in FF14, it's nice.

Putting Ultimates and Savages aside, you should definitely try the Normal Raids and the Alliance Raids. Actually you would have had to do the Alliance Raid to get through ARR unless you were playing pre ShB.
Either way, Alliance Raids are super easy and Normal Raids are only slightly harder than Trials, you should just queue up for them and get them done, the Alexander ones and Abyssos ones have a great story, and the Omega and Eden ones aren't bad. Alliance Raids are braindead and have pretty decent stories too, mostly. Ivalice is the best in that regard, but Nier and the current one is fun too.
Point is there's nothing to stop you.

Does not matter. Normal Raids and Alliance Raids don't require any kind of real optimization, you'll figure things out as you go. Ultimates and Savages come much later, try the Unreals or Extremes first to see if that's what you want to do.

MNK is 100% the hardest melee to play properly. NIN is just memorizing button combinations and your burst is freeform. MNK has 9 different ways of entering burst, especially if you had downtime.
