i liked starbound in its early access before they added the lame story line and dumb characters
They also reduced the possible randomizations for solar systems and planets, as well as completely removing the unique (and randomly combined) wildlife per planet. I don't mind the story quests, but I miss the variety.
They just totally shit the bed with that game. I haven't played it since the early days but it was clear they had absolutely zero idea on how to make progression satisfying.

UnderRail, the final dungeon is dog shit, up until that point the game is excellent but the final dungeon drags on for so long, it consists of like 15 dungeons and you have to fetch something from each of them and YOU CAN'T LEAVE.
I heard if Kamiya had more time, he would've put QTEs into DMC1.

Noita, before release there were fewer perks and no reason to interact with all the miserable postgame content. Some perks also worked much more favourably towards the player. This meant runs were more consistent, even if you were less skilled, leading to a more satisfactory level of overall difficulty. They also added a bunch of 100% achievements as a final fuck you.
Unironically Wind Waker. Greatfish Isle for example is more interesting in its dilapidated state than if it was made into a full town/dungeon. Gives a bit more variety to the world and shows that not everything is hunky dory.
Also I liked the Triforce hunt and would have gotten bored of the game fairly quickly if it was just a dungeon gauntlet.
