Because God of War 3 retconned the story into Zeus being corrupted once Kratos opened Pandora's box, unleashing some kind of dark aura that Zeus had locked away in the first place.
They started being major dicks in god of war 2 though

Zeus kept calling Kratos a failure but aside from saving his family he was able to accomplish everything he set out to do.

Them wiping his memory was never possible. That wasn't the problem. The problem is that they let him believe it was. They kept him along with a carrot on a stick he was never going to get because no one wipes out the enemies of the gods as efficiently as Kratos. Until lying to him became impossible and they finally fessed up. But even then Kratos didn't devolve to killing everyone. He wanted to kill himself. The gods refused to let him die. As in they grabbed him after he jumped off a cliff and put him on a throne. Because the gods absolutely refuse to give up their stick.
Kratos never asked to be the god of war. This does not make Kratos a good person or a poor baby who dindu nuffin. But it does mean that the gods went out of their way to antagonize him until he went out of control. Kratos was an apocalypse they made because they were arrogant enough to think they could deal with any bullshit they themselves create.
