Try watching videos of what real world military firefights look like, or take a step back and consider how absolutely ridiculous the number of people you've killed without dying in single player games is even after being modded for "more realism". Whether a game is meant to be played sitting at a desk with a keyboard and mouse, or relaxing on your couch with a controller is the least of your concerns when it comes to realism.
And I'm not OP. The answer to his question is that video games show off cool different guns to keep shit interesting rather than being realistic and having you use the exact same gun in every game when it comes to modern military shooters.
In the case of tom clancy games, they're usually set a few years in the future, so the devs try to predict which current prototypes will be used then. Also they're french.

The downhill trend in the series had to be with Future Soldier. I still liked the game but god damn could you tank shots in the survival mode and campaign. At least in the multiplayer you died like a normal person

Ghost recon fascinating. It feels like a game set in the 90s but accurate predicated future events.
Tom Clancy was kinda eyeballing his way through pseudo realistic near future military theme dramas, he threw so many ideas to the wall that some stick and some didn't, he got a lot of things right about submarines and stealth aircraft, and that kind of made his legacy, but in geopolitics and small arms he stumbled a lot. For example, in the sum of all fears he predicted a meltdown between Israel and Palestine due to an Israeli police officer killing a non violent Palestine protester on camera... To solve the meltdown the US president holds talks with envoys from Russia, Arab countries, Europe and the pope in the Vatican, with the aim to deploy the swiss guard to protect Jerusalem and deescalate tension, baffling as this scenario is today, everybody goes along and Jerusalem became this kind of holy utopia, but the part that really made me stop reading, apart from the long winded chapters about the president thoughts and his affair with an employee that goes fricking nowhere, was the 10mm Berettas carried by the elite CIA team

and it's a fricking video game from 2004 man, the F-35 was still just a twinkle, the F-22 was the existing "super cool next gen aircraft" and like the only one. Using a still under development but real armament project and putting it in is a pretty tiny sin by vidya or movie standards. I can think of other games from that era with F-22s where they just slapped laser canons on them or something.

Or on the opposite side of the pond, Ace Combat has had the F-22 as a top tier regular plane for a long time. It's certainly not the go-to CAS and the games themselves generally heavily feature missions where air is the primary or exclusive battle, but they do let you equip SDBs on it and soup the thing into a so-so ground attacker if you want for some reason.

I don't really understand how copyright laws work in these cases. I've been playing Resident Evil 3 which had original gun names, like the SigPro. Then I played the remake which removed any mention of real gun brands (I wonder what the mysterious Full Auto "G18" is based on)

The number of actual precedents are limited and tend to favor the developers (the Humvee case is a landmark), as long as trademarks aren't used. For example: MP5 is not a trademark, but H&K is. But in 2022 when publishers have whole teams of paranoid lawyers, they play it extra safe so you end up with ridiculous fake names for guns that were never trademarked or are so ubiquitous as to be public domain, like AKs
Are the any good /k/ related single player shooters that allow you to reasonably opt for stealth or other play styles that aren't being a one man army? A lot of games I've played where there are other options still regularly push you toward over the top one man army combat even when you're trying to avoid it.
i think ghost recon breakpoint encourages stealth more since being in combat for too long increases the chance of having to heal wounds
