Honestly, no. This isn't true at all.
It does some Peter Pan, generic fantasy, and a few Arthurian images, like the sword in the stone, well. It combines those elements in a way that creates a nice atmosphere.

I'm convinced it's 90% just nostalgia and brand simping from people who played a lot Nintendo and Zelda games growing up. As someone who never owned a Nintendo console while young - I completely fail to see the appeal of both OoT as well the newer games.
I love Kass! It is certainly an interesting phenomenon OP, but if I were to guess, I'd say it's because the long development cycles, combined with the prestigious brand that Nintendo has developed for the series, and the grandiose nature of each major release leads to the illusion that these games are much better than they actually are! That said, they are still generally fantastic and above-average games in their own right, and even if they may not deserve to be considered the best, they are definitely top-percentile consistently! Though the Fujiyabashi games have been pretty disappointing, and the attachment people have to them is very questionable!
