Because F-Zero is a tech demo meant to showcase (powerful) hardware.
And since Nintendo dropped out of the hardware race after the Gamecube era, it's simply more reasonable from a business perspective to focus on Mario Kart.
I miss the days when companies made decisions that weren't solely influenced by a business perspective.

There's no way to mechanically improve on GX.
This, basically. GX was the peak, with speed sensations that are still unmatched 2 decades later, awesome graphics with great colors and track designs, and a sick soundtrack.
You genuinely can't get higher than that, unless you try making it VR, maybe.
Mario Kart sold over 50 million copies on the Switch and racing games are very niche outside of that
Kirby has a dedicated studio that makes only Kirb.
Mario and Zelda sell millions of copies and make back their dev cost enough to justify long and expensive dev time.
F-Zero has neither of these.
I have no faith in a modern dev to make controls as tight and music as good as GX.

It's not 100% dead so long as people keep asking, but it is basically legacy content. F-Zero not being that profitable is a huge reason why no one wants to make the next game, but even then it just seems like no one at Nintendo really has an interest in the franchise in general. If someone actually cared they might get something small through, which is apparently what we're about to see.
The skill floor is too high and there's no way to lower it without killing what F-Zero is. 90% of gamers simply can not play an F-Zero game. Not as in they don't want to, as in they are physically not capable of playing the games. Because games have gotten so expensive to make it is no longer possible to sell a game to just 1-2 million people and make a decent profit so that means it's dead, sorry.
I don't believe this. GX is not an especially hard game and I'm not even good at video games. People meme up the harder difficulty story chapters- which is fine, a game that says 'Very Hard' should fucking be 'Very Hard,' not 'Journalist Plus' mode. The skill CEILING is astronomical, but it's all time-trials autism mostly enabled nowadays by immediate online video sharing and such. The floor is just average. You need 0% of the crazy extra hidden tech stuff to finish the story and all cups.
I think you just don't realize how bad the average person is at video games. Because Ganker is a collection of 20-40 year old men who play a ton of video games it can become a bit of a bubble where we see games as much easier than the general public does. But keep in mind that while we may see a game like Ocarina of Time as easy, the average person would get brutally wrecked by that game. And now imagine those people playing F-Zero and how it would go for them.

I love how the Fat Shark has an extra-wide recliner for a seat instead of the usual pilot's chair. Wish the machines had more little touches like that and the Sonic Phantom's lack of a steering wheel (in the menu, since all the machines are lacking one in races themselves), stuff like the Night Thunder maybe having less fancy sci-fi grid displays the other cars share and more old monochrome displays or even analog ones to show how old it is. I'm totally nitpicking though, given how much detail they did include.

Yeah, but they were handheld spinoffs with minimal marketing that nobody remembers.
I remember them, because I had GP Legend and spent a lot of time playing it because it was fun. having multiple characters for the story mode was breddy neat (even if they often shared races/events) and it even had some gimmick races a la GX's "don't go below this speed or you die" if I recall.

I would love if SEGA owned F-Zero. It rightfully should. The best game in the series was created by RGG Studio.
Modern Nintendo isn't capable of publishing an F-Zero game. They literally do not know how to make a proper F-Zero game.
