I want a really rich historical roleplay experience but considering that it's new and CK2 is old and has a ton of dlc I'm thinking about playing CK2 instead

Nope.
Character roleplay is much better. CK2 character traits only effect your stats, so no matter what traits you have to play the character the same way. CK3 doesn't do it well, but there are some mechanics they try to force you to play differently depending on your traits.
it's better than ck2 especially for a new player. ck2 has tons of bloat and bullshit, but it has tons of great mods, while ck3's big mods are still in development.

You need to get your IQ below 75, but your autism to 110% capacity. It's a tricky balance but as you're on Ganker you're already halfway there.
