Making it balanced, not annoying and not worthless or redundant is a challenge.
I can think of Mortar Guy

There are subclasses already. Like demoknight and archer. Why not turn them into actual classes?
tf2 is based on weapons not classes
Engineer needs something to make him viable in Medieval mode.
Unfortunately the catapult literally wouldn't work anymore without a second implementation of the airblast mechanic.
