The entire Village is very well-paced while the Castle feels like a bunch of encounters with little thought for pacing.

I mean, a castle in a RE game could be far more atmospheric. I get that RE4 is an action game but the first two things you do in the castle is fight the Garrador and do the Water room. It could at least build some tension and have some smaller encounters first, especially right after the flaming ballista section
Before you fight the garrador you talk with Luis, explore the hall, talk with Salazar, explore the cell. That's pretty atmospheric.
Honestly I think you hit on the reason people hate the castle. It's just too breathless, while the village usually gives you a break after every encounter or two, and only some of the emcounters start with you getting attacked right away.

Yeah, many of the village encounters even let you see enemies before they aggro, letting you start the encounter how you see fit (headshots with the rifle from afar, etc).
All of the early castle encounters include you being ganked by aggro'd enemies.

You can finish this room by constantly moving, switching weapons and killing people as you go. You don't need to to hide and camp. Also there is nothing wrong with dying, learning and trying again. That's just part of the game too.

at this point in the game you should have upgraded weapons and plenty of ammo. you should also be fairly proficient with how to take on each enemy. this game is easy and just gets easier as it goes on

My shameful vidya confession is that I have still haven't beaten RE4 on Professional because I can't make it through the Water Room. I've beaten the game on Normal about 60 times, though. Up to that point I did reasonably okay but it's just such a bitch on Pro. Need to try again and more carefully conserve ammo and stuff.

Professional is only hard at the very start because the early fights aren't designed around being played at max game rank. Once you get past the first chapter it's barely more challenging than normal mode, assuming you're a good enough player to keep the game rank near max when playing on normal.
If you're really having that much trouble then you should seriously consider camping in the button room until the ganados run out. It's tedious but you will at least be able to progress
the village is boring and you can run past most of it without missing out on much (just some treasures, gold herbs and the free punisher). the castle is when the game starts actually trying to challenge you and has all of the best and most memorable scenes

The fact that RE4 has so many sections that could deemed "that part" tells me it succeeded at being tense and nail-bitey enough to be worth calling a Resident Evil game, because none of those sections are unreasonably hard or obtuse, they just succeed at being as suspenseful as they're supposed to be. I always thought of RE4 as a suspense-thriller game as opposed to horror, something adjacent and not altogether removed, but still different. A lot of that has to do with the abstract and almost alien-sounding audio design, though. The remake demo with the wub wub and the orchestral trailers are already taking away from that.

The water room is great, but I feel like it's only appreciated on subsequent playthroughs. It's a big difficulty spike, but when you've approached the skill ceiling it really shines. This game really has no "that part" for me. It's all great.

The Broken Butterfly is only better with the exclusive which is extremely expensive, which makes it better for a second playthrough when you already upgraded more essential weapons
