      You know you also need to use items that enable summons/invasions, right? ER doesn't even let you get invaded as a solo host unless you go out of your way to use the Taunter's Tongue, and DS3 puts solo embered hosts at the lowest priority for invasions. The older games don't have the same priority system but they're also older so there aren't a lot of invaders left in general.

    PVP can be fun at times, and sometimes it's annoying. Co-op generally breaks the game (but you can break the game by summoning npcs instead of players too, or in Elden Ring you can summon the game's summons with the summoning bell or whatever).

    I suggest you try to avoid playing co-op/summoning. As for PVP, you might enjoy some of it in DaS3 (every time I replayed it thoughout the years I've had invasions), but it's completely passable.

    Demon souls and dark souls 1 are the only games that have cool gimmicks to warrant it's online component. You can get an extra flask if a player nearby kindled a bonfire, or hear the bell of awakening that other players are activating. Demon's souls online is even more involved, with it's world tendency mechanic i would say it's vital to play it online.
    Now, the rest of the games are purely messages, bloodstains and pvp/co-op shit. They don't do any more gimmicks so I would say they play best offline with their worlds not being a cluttered mess of messages and so on.
