Kyoshi was a control freak that founded the Dai Li in order to destroy any potential peasant uprising/revolt in general that would threaten the stability of the kingdom. However, her character is clearly influenced from what you'd get from Han historical dramas, which most often than not were bisexual as frick. Didn't help that in the original series' commentaries they revealed her to be tall as frick and having big feet.

There was pretty much no multiculturalism in the original. I'm not sure you know what multiculturalism is. It's the idea that it's good for many different cultures to exist within the same community, instead of a more uniform culture as was the case in pretty much every nation until the last few decades. Yes there are different cultures in the show, but they exist independently. You don't see a bunch of water benders walking around the earth kingdom. There's no fire nation dude living in a hut in the south pole.
On the one hand the part of me that wants to view the series completely in earnest is excited by the products of nations mixing.
