They sure do care when they release half their games in an unfinished state, adding content in free updates a year after release, still amounting to far less content than previous entries or competing franchises. Or just straight up being overpriced at launch and never getting more content.

Yes, this strategy is quite petty and they've used it in practically every game that isn't AAA. I think the idea is: "let's make 50% of the game, if it sells more than expected, we'll make another 25% and eventually sell DLCs to monetize it.
Games like Mario Golf Super Rush (made by Camelot) suffered a lot from this strategy, as it "only" sold about 3 million copies, the game was quickly considered finished even though it is still today one of the most empty and lazy things that has ever carried the Mario and Nintendo brand.
Probably no one at Nintendo has the mental health to keep working on the same game anymore. TOTK is basically a remake of BOTW, so... 12 years of working on the same shit.
What's more, TOTK depletes all the milk that that dairy cow still had to offer, and any honest person who isn't autistic or an incurable fanboy felt pretty burnt out after the experience, which is pretty exhausting since it doubles down on a lot of things from BOTW that were already saturated. They didn't do much to fix the problems, they added more grind, more repetition, and a central mechanic that is basically: "build some flying garbage so you don't have to re-engage with the world of BOTW again".
You can't get anything else out of this game and I hope Nintendo has realized that (which the lack of DLC seems to indicate is the case).
I'm kind of glad honestly. I wanted to be physical-only with my Switch games, since I travel a lot and don't always have Wi-Fi, so everytime a game forces me to download shit to get the full experience it pisses me off. Put everything on the game cart you israeli fucks.

A motorcycle equivalent was probably removed to not make it clear how terrible the vehicles you build are, as the motorcycle is fast and fun to drive, while your TOTK vehicles are all slow and horrible.
