You should always start with the older ones, newer Tales added 3D movement in battle and you might get frustrated trying to play a game that doesn't have it later on.
I agree with this guy. Going back to earlier versions of the tales battle system is more jarring. Playing an earlier FF game, you'd find the battle systems are different enough to middle-era FF games that it's not just a step back, but when I replayed Symphonia after Berseria I found it was actually a bit weird, where when I played it in... god, 2005? 2006? symphonia felt just plain good.

Symphonia is good but I feel is a bit outdated by today standards, mostly because it was the first 3D tales games and they were still figuring out the combat system. I say a better start could be Berseria because the battle system feels better but it could be harder to adjust to an older battle system if you choose to play an older title.
If you are ok with emulation (I supposed you want to buy them from a digital store) maybe you could start with abyss, because the battle system is better than Symphonia.
Abyss and Vesperia are the only good Tales games. It's depressing that the series keeps on trucking and pumping out shitty game after shitty game, whilst franchises like Suikoden and Wild Arms were thrown into the dumpster of history.

Berseria doesn't really play much like Zestiria at all, it's completely different from the bastardised Graces combat Zesty had though admittedly i forget the details. I remember thinking it was pretty mediocre but most games have shit combat anyway
