It's less old good, and more new bad. These two are not mutually exclusive. Problem is new games are just rehashes of old ideas with a shiny coat of paint enjoyed by people who never played those older games. Essentially, lack of true reference is the issue here.

Old, filtered through the lens of time > the unfiltered disposable offerings of the new. The work of a great artist > some tumblrnose webcomic. The top 30 games of all time on PS2 > the last 30 games to be released on PS5. Your grandma's $1000 in 1975 cookware > your Walmart $75 in 2018 special. Generally if you look back on the old stuff people still remember you won't be disappointed, unless you're specifically choosing to play Wii or 2600 or whatever shovelware for some reason.
New disposable crap > old disposable crap, micropastics are awful, but better then lead pipes, asbestos fire proofing or radioactive paint. Streaming and music piracy > cassettes and AM radio. Your cars airbags, seatbelts and crumple zones > being road lasagna.

However as someone who didn't get a console before 11 and only played like Stronghold and 2 other games on PC before that, here are games i've played for the first time as an adult that still hold up extremely well
>Deus ex
>System Shock 2
>Mario 64
>All classic RE games (not laser gun shit)
>Warcraft 3
>Diablo 2
>Half life 1
>soul reaver
Games that have not held up (I will not ignore awful gameplay for a good story, unless the game has basically no gameplay or its at least mediocre)
>3D zelda games (too easy, too much dead time, too much handholding. Good for kids, shit for adults without nostalgia)
>Baldurs gate and all other old CRPG that arent plantescape torment. Especially kotor since its also simplified and extra janky as a console rpg (real time with pause is literally the worst game design decision in the world, born out of necessity and taking the bad parts of all combat systems)
>morrowind (yes the story and worldbuilding is amazing and endgame gameplay is enjoyable. But the journey there, so 80% of the game unless u optimize from a guide or experience or cheese is full of unfun combat)
>sonic games (theres no game, its basically a screensaver that plays itself)
>90% of turn based JRPGs (The person who invented random encounters that make up for 50% of the time played with 0 challenge as well as the demand to grind these encounters to not be underleveled should be executed)
