Back in 2018, I just couldn’t beat Detlaff in Witcher 3. I’ve never struggled in that game, I’ve had the best wolf armor and did as many side quests as I could, but no matter what I did, Detlaff would just almost instantly destroy me with this one specific attack I couldn’t dodge for the life of me.
I can’t recall every other detail, but it honestly felt unfair and harmed my experience with the game since I was forced to lower the difficulty from Normal down to Easy. I can understand where the OP writer is coming from, but I’ve never played Sekiro, so I can’t comment more than that.
Sekiro is an actual good game though

I played it on Normal the first time and then quickly raised it up to Death March because Normal was too easy and then beat the entire game that way

From Software games have always been overrated. Replaying the same shit over and over again to "master" it isn't fun. Video games are entertainment, not a skill or talent that needs to be practiced. Imagine if a book made you reread the same page multiple times or movies forced you to rewatch the same scene multiple times until you really "get" it.
No fuck off, video games should provide enough challenge to overcome but not so much that you waste hours on a single encounter.

i got a feeling that gamers nowadays have some sort of Stockholm syndrome with fromsoft games. When i played DS1 what i liked wasnt the punishing bosses or dying over and over again, it was the rest.
Then i had to watch slowly and slowly how fromsoft games felt like they had to make the game just "death games" because thats their trademark rather than just fix the gameplay loop. "How do we make the boss fights engaging, interesting and hard, but not having to force the players to die over and over and over again unless they get the patterns perfectly well"
They kinda fixed it with sekiro, at least in sekiro you have the tools to easily learn patterns and i dont remember dying immediately to one combo, i always remember always having the chance to do something
However the biggest offender is elden ring, ive never played a game before that went so hard on the "one shot" meme and "hard boss fights" meme, it reaches a point it gets ridiculous.
And it feels like people forced themselves to like dying over and over and over again instead of properly criticizing fromsoft games for being death games, instead of trying to solve the problem of how to make the games interesting and hard, but not having to rely on kill you over and over and over again.
I gave up after losing 4 times to the final boss and haven't touched the game since
What can you even "grind" in Sekiro, dipshit? All of the health and damage upgrades are limited and the damage ones require beating bosses.
