Are you only interested in action RPGs? I'd argue WotR is the most recent paladin simulator to be released.
Also, I'm pretty sure you didn't try hard enough in your Skyrim playthrough, boss.
Should be 1-hand with empty off-hand for spellshields and the anti-undead spells from apocalypse.

in neverwinter nights shadows of undrentide you get a whole ass dungeon route for a paladin and reactivity with a lich npc
Twohand completely dunks both vanilla and mods.
It's me out of the box guy and lifetime cleric and paladin enthusiast.
Builder style:
Valheim + Legends mod (Actually priest but you won't care when you see the spells and equipment you can get)
CRPG style:
Both Pathfinder, even POE2 if you don't mind a mechanically shallow wokefest but I will grant it does have some interesting spins on pallies.
New Generation CRPG style:
DOS2 via a water skill + warrior. BG3.
ARPG style:
Dragon's Dogma 2 has Mystic Knight.
Blobber/DRPG/Crawler/whatever the frick the kiddies call it now:
Eye of the Beholder and Ravenloft from your blasts from the past.
If you like Diablo style:
Last Epoch has a straight Paladin subclass that's very good, still in beta but very playable game in the current state.
Grim Dawn has several ways to build paladinesque builds including with guns.
JRPG style:
Trials of Mana has a pretty awesome and visually impressive pala subclass.
Shining in the Darkness
Basch in XII can make for some pretty good paladin builds, minus the aesthetic trappings per se.
Dragon Quest IX which was even co-op.
And now for something completely role playing different:
Play EDF 5, take a fencer, paint it bright white, name yourself Paladin and rescue the shit out of people from alien invasion in online multiplayer. Shields, hammers, swords, also available along with missiles, gats, and mortars.

What the frick are you exploring in skyrim exactly? You see everything that the game has to offer and more in like 20 hours of gameplay, but coomers and moders somehow manage to pull off 2000+
Have you actually played skyrim? Even in vanilla there is a ton of stuff to explore sure it may only be a hidden sword that's worse than your equipment but the way it's presented makes it worth the while. Then there's the way that book texts aren't just text boxes like in the witcher 3 for example but represented as real in game books, journals, etc. adds a lot of charm even if you are currently in copy pasted draugr cave #5.
Also sometimes all you need is a nice scenery and a skyrim has a lot of that to offer I'd doubt that you would be able to experience it all within 20 hours.

How would a Paladin playthrough of Skyrim be? A Paladin sent to Skyrim to help the Legion with the war effort? Who would be a good companion?

There was literally no reason to let Serena live if you intended to join the Dawnguard. Serena ruins that questline.
Play Arcanum, go on a crusade against technology and embrace White Magic and Melee master

The answer is always more mods. There are mods that change the pace, lethality and perceived 'weight' of melee considerably.
