Because Snake's thing is that he is a really good soldier with no special powers who adapts and overcomes the odds. In TS he is pulling ridiculous The Matrix moves like jumping off an incoming missile and firing a stinger directly into a helicopter cockpit, among other things he never does in any of the other games.

Beat way I've seen it described is that twin snakes is like a Bollywood version of MGS. Sure, it tries to be very cool, but often in the absolute goofiest way possible. Also, the voices for a few of the characters are shit compared to the original.
Also, play the original on easy first. It was originally released in Japan with only the easy difficulty available, and normal feels a bit too punishing for it to feel balanced. I had a harder time with the end boss of MGS on normal than a bulk of the bosses from the Souls series. Difficulty is fine, but it seems to break the pace of the game when the sneaking sections are pretty easy going but you're suddenly expected to perform relatively flawlessly for bosses.

Hideo Kojimo hand picked the JAPANESE film director Ryuhei Kitamura himself to do the cutscenes for the remake because he specifically wanted that sort of action in the game. Twin Snakes is the Japanese version of MGS except now with a bigger budget. Pic related, Hideo Kojima saw this and said "Yes! That's exactly what I want MGS to be!"
