FDDA is the only must have, the animations it adds is peak immersion. Plus Boomsticks and whatever is a solid mod that adds new weapons and weapon animations.
You can adjust and tune basically everything. Enemy ai, enemy density, weapon/gear degradation, treasure rates, psy-storms ect. I started playing on default and then turned weapon degradation down because I dont like to keep repairing shit. Other than that is regular STALKER difficulty except being a sandbox.
Before the game starts (and during) you can adjust the sliders with damage and enemy lethality, if you want fancy weapons go to their moddb page add ons section sort the weapons model category by popularity, there should modern weapon packs. Just get a weapon pack or character models pack (sort by popularity if you're unsure) to see if it fits your needs.

is stalker anomaly even playable, it looks cool and immersive but it just seems absurdly hard

also if you get add-ons make sure they're up to date and compatible to the newest game version!
