Trying to face multiple enemies in this game is a nightmare. You have to use either huge staggering sweep attack weapons or spammable sweep attack weapons. Every Fromsoft game has this problem. The games are designed around fighting bosses but 50% of the game is fighting mobs that just stunlock you unless you have previously mentioned weapons

This. Other than DS2, which is trash, there are plenty of very good ways to avoid getting bumrushed, perform crowd control, and to cut off your enemies in every FromSoft release since Demon's Souls.
In most games where you can fight multiple enemies in melee combat at once, it's just because they stand around in a circle and wait their turn to attack you. I've enjoyed plebty of games like this all the same, but the Miyazaki approach is objectively much more thoughtful and produces much more intense satisfaction from triumph in combat.

It's realistic. Multiple enemies aren't just going to stand still while you fight them 1v1 (like in other, worse games), they're going to overwhelm you.

Shields suck in this game. Outside of niche weapons the game doesnt give you tools to fight mobs that can stagger which is basically every mob. Sekiro at least gives you fluid movement and a good parry

This is the game where Fromsoft lost the plot. Poise essentially doesn't exist anymore, and all the monsters feel like they're from Bloodborne, running extremely fast and spamming combos. Bloodborne this wasn't an issue because if you can avoid a combo, you can gun parry from range, and the quickstep allows you to maneuver much more aggressively than rolling.
Dark Souls 1 had some combo spamming enemies but poise was much more effective in that game, it was much more fair standing and trading. Everything after bloodborne has felt like Bloodborne enemies with Dark Souls movement and it feels terrible, Elden Ring has the most obvious case of it and it's why most people take Bloodhound Step or whatever it was called.
DS3 is the easiest in the series. You wrote all those words when you could have just said "I got filtered"
It's been over a decade and Fromsoft fans are still deflecting gameplay criticisms with arguments about difficulty. No Dark Souls game is hard, and I've beaten them all except Sekiro which I didn't play. Nobody struggles with these games anymore, most of the "difficulty" with dark souls 1 was largely game knowledge and overly exaggerated because there were so many movie-games at the time.
The fact of the matter is DS3 and ER are not as enjoyable as 1 for a variety of reasons but the enemy design is principle among them, it's simply not fun that every single enemy boils down to

No, I'm saying enemy design has become a mess because it doesn't correlate to movement in a way that's engaging, and my principle complaint is with how poise functions, if you had read my first post. Regardless of your method of offense the primary way of damage avoidance is just i-frame abuse that's enabled by the extremely fast stamina recharge and huge stamina pool, with early game characters in DS3 having upwards of 5 rolls that were almost infinitely spammable, something that was basically impossible in DS1 or 2 outside of end-game builds that were usually designed around that advantage for PvP. I don't see why you have to be so nasty and disingenuous instead of just talking about a game.

Fighting mobs simply isnt fun or satisfying, simple as. Unless youre stronger than the enemies you cant roll enough to dodge the attacks from more than 2+ enemies without getting perma staggered. You also cant attack them while theyre on the ground or standing up. So you have to bait them out 1 or 2 at a time
If you don't find it fun then don't play the game. Most of us enjoy it which is why we keep buying it

I wouldn't expect less, it is the only control scheme that makes sense. But the problem is that the games are designed around controllers, so you char doesn't face where you are looking, that is why fighting without lock on is so awkward. If they turned around by mouse movement alone (like in EDF5 or mount and blade, for example), fighting big groups of enemies would be a lot less awkward.

if you can't handle group fights, consider pulling with throwing knives/bow&arrow to 1v1 and thin the crowd, if you try fight 5 enemies at once you're going to get your ass kicked, start with 1, or 2 at a time until you're familiar with their movesets and tells at which point you will have no problem fighting 4/+ because you'll reflexively know when to space/attack/etc... rather than getting instantly combolocked to death because you missed a single tell
