Until the DaS 2 DLC, avoiding attacks by simply moving outside their range was not only viable but often the best strategy: back then rolling used to cost a fair bit of stamina, and saving it for attacks used to be important.
The DLC enemies had even jankier hitboxes and tracking than the vanilla ones, couple that with the obscene resists (ice enemies with a minimum 60% fire resist WTF) and you had some pretty unfun areas.

When one mistake kills you instantly, you have made one of two mistakes or both of them. You have either not invested in the slightest into increasing your health, or you've wandered into the wrong neighborhood, motherfucker!
When you don't know what enemies do and you react wrong as a result, that's not supposed to instantly kill you.

I've always played the first dark souls by rolling through things, the only time I didn't was when I wasn't aware I had i-frames.
