The best games I've played (Civ5, l4d2, ksp, Rimworld, Factorio) have few mechanics. These mechanics evolved organically through implementation-testing phases. Unnecessary game mechanics are added by execs, non-gamers and morons.

Haven't played the others but factorio has a load of mechanics, so I can only assume you're wrong about them as well. Even something as simple piping water into an early game boiler for power has a bunch of different mechanics at play.

I like the realistic aesthetic of this map, but lol @ all those sections where the residents just have to watch the subway go by with no stops anywhere near them. People on that small island must be pissed, hope that's where the mansions are so they wouldn't be taking the subway anyway.

The thing is it takes like an in game day/real hour to go slightly hungry and you only get some adverse effects if you're really hungry and food isn't rare or expensive at all. It's just a thing youdo when you have a little downtime, helps my immersion/autism

I actually used the subway extensively in GTA IV. it’s an effective means of fast travel without draining you of money like taxi rides do

I don't know why open world games don't have a simply "wait around" mechanic. Be it taking out a cig, or just resting on a bench. Was more annoying in missions that required a certain time of day and didn't just forward ahead to it for you (hi San Andreas).
It was extremely necessary. There would've been an unholy shitstorm if they released the game without a subway system.

In Siren, you have to press triangle to open a submenu to perform a basic action like "pick up keys" when you could just press X and automatically perform said action like a normal person
I remember being disappointed by GTAIV at launch by how little there was to actually do in the world. Like there was so much attention to detail, but most of it was just stuff like OP where it's like "Oh that's neat", but you couldn't really do anything meaningful with it.
My biggest issue was how closed off all the roads were. It makes sense for NYC, but after SA where you could turn down almost any alley or side street and usually find some kind of route or shortcut, in IV it felt like almost every alleyway was either a dead end or full of garbage that you couldn't drive through. The subway was pretty much the one place you could actually go in a pinch to actually get away from a 4 or 5 star wanted level.

I understand what OP is trying to say. I do find it kind of a drag when a game has cool stuff like this, but theres never any good reason to really use it, and you only do so because you just want to see it, even if you know you're kind of forcing it. It does take away from some of the immersion if its kind of pointless. It makes me want a game set in NYC without the ability to jack cars so I would actually have to make means of these other forms of travel.
