99% of the difficulty from the originals came from horrible controls and trash frame rate.
It's alright if you never played the originals and built a feel for how the games are SUPPOSED to play.
It's pretty awful if you've played the originals, and it gets WORSE if you're trying the time trials for the first two games since they were lazily pasted in and Crash 1 and 2 are not designed for something like that, and if you're going for platinums you're going to be running up against the little issues the game has FAR more.

Crash 3's levels are largely designed in a way that you can complete them in a single sprint to the goal.
Crash 1 & 2 aren't really designed in a way you can sprint all the way to the end there's points where you're clearly meant to stop and be patient and a lot of the relic times are done by brute forcing.
Are 2 and 3 worth playing if I disliked the first game and didn't bother playing the sequels?
It depends on what you didn't like about the first game.
If it was too basic, yeah you might like 2 & 3, Crash's moveset is a lot more fluid and fun to fuck around with.
If you don't really like Crash gameplay at all you might not like it.
I'd say maybe go get Crash 2 and try the first few stages, if you like it you'll probably like it and 3.

I brought the remake because I like furry platformers and it looked like something I would love, and I was right. Also I gave up on waiting for a brand new Donkey Kong game so Crash filled the void
the base look of crash 2 and 3 is perfect, it was a style unto itself and not really meaningfully held back by the tech, however in execution there were some pretty ugly levels here and there, some ugly effects and low poly models. I think dumping the old style in the trash and going for a generic de saturated pixar look was a mistake, they should have approached it with the mindset of bringing the original look in accordance with your memory of it.
It's more broken at framerates above 30fps, and plays just different enough from the originals to fuck over people who played the hell out of them.
You're mixing it up with the Spyro remake which was more fucked up.
