You don't understand what excel means. Souls games excel at exploration. Character action games excel at combat. Sekiro excels at neither. As such there is no reason why I should play Sekiro when there are games out there that do it's aspects way better.

because if one game sells a lot and has these features, the new game has to have them too, otherwise they'll be seen as lacking in comparison
why would your average consumer buy Slop Game 1 which doesn't have crafting, when Slop Game 2 does? that's mid af fr fr no cap ong
there's also just the fact that consoomers want games to be bigger and better looking year after year, which means massive budgets, which can only be recovered by trying to appeal to as wide a market as possible which inevitably means checking off as many boxes as you possibly can in the attempt to cover every demographic, from a 5 year old kid to a 90 year old, as long as they have income you want to appeal to them somehow
the end result is an open-world game with RPG elements and crafting, it's what the imaginary Average Money-Haver wants, as per their extensive research
