Giving everything random Iris colors instead of the cool beast eyes ruined so many mons why the FRICK does charizard have blue eyes now it looks so cringe. get rid of those purple irises and we'd have a wild animal lookin little monster guy on our hands again gamefreak's 3D models are still pretty bad especially but I think that one simple chgange would go a long way towards bringing the soul back

I think these models are a relic of a rushjob from the early 3DS era that have overstayed their welcome. Nidorino is one of the worst but nidokings model is bad too. when compared to his actual 2d design or even his stadium model.
I know the poses would improve a lot of monsters like xatu and other flying types but sometimes the design is changed (why did they frick up hitmonlee? seriously?) and sometimes the model is just fat and gay looking like, idk, typhlosion. they need a gen 1 autist to brush up most of the cast to bring them back in line with Tajiri's vision.
Because you have an unrealistic expectation of how a 2D design you have nostalgia for can be translated into a 3D model. It's a matter of style, not quality.
It's not like they let nobodies design them. They were conceptualized Sugimori during the development of the original games, and they were made according to his vision in the transition (they take after his colors). I think the posing for the gliding flying types are objectively bad, but I don't really notice anything awful otherwise. What don't you like about the Nidoran line or Hitmonlee? Maybe I'm just not getting your point clearly.
Ok here are examples of changed designs. I don't like how modern pokemon has been enlarging the pupils. Hitmonlee in go and Let's go has a huge dumb forehead and weird ass eyes. You've got to see what i'm talking about here

You're stating your personal opinion (and a very controversial one, at that) on a very small feature that almost no one cares about, the pupil size, as if it made the models better or worse. If you can't see the Hitmonlee on the top left is a much better quality model than the Stadium one, you're blinded by nostalgia. Posing on them can be bad sometimes, I agree with the Typhlosion thing, for instance, but the point of a 3D model is that it works on all positions, so you can just do that (change the Flying ones battle pose, hunch over the ones you said, add permafire to Typh...) without actually changing the model. And if you saw them in game, actually moving, walking and running around instead of a default stance .jpg, you would see how alive they feel

But you could also handwave that away as a sprite detail being mistaken as a design element. Like Mr. Mime's squished cheek and fingertips being turned into spots.

Sugimori ruined the original designs.
You can say that, but it's unlikely that they would be the same original designs you know without his influence.
Poses and animations are bad plus they washed out all the colors so much.
