It veered greatly from being a spiritual successor to Baldur's Gate into a dating sim with RPG elements sprinkled in (hence the mechanics being more and more simplified with each sequel). That's what happened.
DA2 wanted to be more of a console-friendly action game and was generally the point where Bioware was falling. And DAI was their attempt to push back to formula without most of the people who made it work to begin with.

In some ways like the way they've handled companions and some of the dialogues(plus ofc move towards full cutscenes instead of standard dialogue box, but that's AAA RPG thing not Bioware thing).
However everything else is completely different. The approach to the way the world is made is different as instead of open world proper you get a handcrafted map, that is sort of big but much more limited in scope, there are basically no trash encounters in BG3, the way BG3 works makes some utility spells like summon magic hand or whatever useful in their own ways(in game rather than in cutscene too), different quest design philosophy etc.
BG3 most likely got biodrones sucking its dick but it's because biodrones were into parasociality of BW games not because they liked their game design.

Dragon Age Origins is good, though it shows its age in some areas, especially the deep. Many great sidequests, multiple memorable party members and replayability from the many origins and class combinations. Still, the classes and skills are very simple, yet the game can be quite difficult and require pausing. It is a much easier game to swallow for people who don't play or particularly like crags.
Dragon age 2 once again has a great cast and some good sidequests, but it's fuck ugly, combat is now all action and rather meh, and the main character is annoying. No replayability at all - dungeons become familiar very quickly. Game kind of feels like duck hunter in battles, I'm not sure how to explain it.
DAI has too much filler shit, but also has a good cast and sidequests. Classes, skills are combat are all far too some and easy. You won't want to replay it.
I hope the next dragon Age abandons the console market and is just a straight up crpg that completely dogs bg3, with an optional 3rd person view.

EA fundamentally has no idea what to do with it. Development of DAO started around 2004 and the game was meant to target the old PC audience instead of the console one(like their star wars game), this resulted in DAO which from the perspective of time was kind of meh but it was the first party based cRPG from studio that had more than 5 devs in years so it did very well. Then EA decided this kind of game won't sell so they've told Bioware to go into more action-like gameplay and release sequel very quickly, which resulted in DA2 that failed, and while the next game evidently was supposed to go back to more tactical gameplay it's still a compromise and very meh, but again was in decent place at decent time so it sold a... reasonable amount.
However this direction was always flawed, Bioware seemingly can't figure out decent action combat system if their life depended on it, from the 20 minutes of Inquisition I've tried to play it was like hold button for combat to go on and the overhead "strategic" interface was so bad it was useless, so the game is a failure on both sides, except that's all EA allowed them to do(seemingly) and the few seconds long clip we have from DA4 shows the same thing. It will struggle to sell half of what BG3 and EA will shut the studio. Ironically sticking to the original intent the series was created in would probably have been much better for both Bioware, Dragon Age and EA

Think of Mass Effect, the first one. While it wasn't the prettiest looking game they did invest in some new facial animation/lipsync technology and the cutscenes did deliver pretty good effect at the time. They've also started to work with more dynamic cutscenes etc. in general that part of the game, that became so important for them was bleeding edge at the time. Few years later, when DAI was coming out people just expected it to be a goldmine of poorly acted, poorly directed, cringe worthy and poorly animated dialogue-cutscenes.
Hot take: Dragon Age 2 is the best in the series >Storytelling focused on side characters, not super big heroes. Any ability or ability upgrade that looked interesting turned out to just not do what it said or needed to be manually casted EVERYTIME because the party AI could only handle single target abilties.
Customizing party AI was reduced from 100's of options and conditions in DA:O to deciding when you want them to drink a healing potion. This last point is probably the worst and is the reason why I will never buy from biofag again.
