Keep in mind we're talking about regular vidya controls, so no Wiimote stuff. So your combat system should be playable and feel "right" on a regular controller/mouse and keyboard.

Dragon's Dogma
Combat was great but unfortunately everything else in this game sucked hard.
For someone that never played DD, how would you describe in the same way as OP? From what I've seen it's basically Soulslike, in a way, but not as slow. Is this correct?

On the player's end you've got a lot more mobility and weapon skills add to your basic attack toolkit kind of like if you had multiple Elden Ring ashes of war equipped at the same time. You've also got the ability to climb onto large monsters and attack as you climb them, or pick up and carry, throw, and grapple/pin smaller monsters. Stamina acts more like a big mana bar for your skills, spells, and ability to sprint/climb in combat rather than Dark Souls' short bar for managing your normal attacks.
On the enemy's end, every monster has weaknesses, locational damage, and other behavior interactions to take advantage of in combat in a way that feels vaguely similar to Monster Hunter. A Cyclops, for example, can be made to take off it's helmet by climbing up near it's face and then getting out of the way of its hand when it tries to swipe at you; it ends up swiping its own helmet off. This exposes the eye and tusks, which you can either aim at with ranged attacks/spells from the ground or climb to and strike to break the tusks off for parts or hit the eye for big damage. You can also climb on its ankles to throw it off balance and make it fall over or stun it with electricity. Every monster has several of those types of things unique to them.

I love Dragon's Dogma for being a quirky Itsuno action game but the idea that it's some masterpiece of RPG combat is a myth. Also awful enemy variety, you want a game that's guilty of copy paste boss design, DD is the king.

when I played dragon's dogma on the PS3 years ago I was having quite a bit of fun at first, then I got to that first main city, did a bunch of sidequests, went to the dlc island/dungeon, went pretty frickin deep, and then just got kind of tired of the whole thing and stopped playing because while it was fun to hunt for upgrades and get more skills etc... at some point it was just all very very samey; similar enemies with more hp, admittedly impressive to look at but ultimately very button mashy and repetitive combat loop, the deeper you got into the game, fights didn't really get harder, just longer
What if you don't pause the game? One does wonder if it would change anything.
It would certainly be an improvement, hopefully DD2 gives you some sort of item wheel like Monster Hunter.
I don't get the copy/paste complaints. For DD they went for quality over quantity, with all the variety of combat and interaction enemies offer. Armoured variants aren't just tougher reskins, they become weak to lightning or can have the armour broken of, trolls prioritize women. For stuff like Souls, the combat is nearly unchanged between everything. You block/dodge, you counter attack. Throw in some guard counters and parries and that's really it, so I guess the quantity is more important to give the feeling of variety.
Souls games are the exact same way, enemy's also have tons of interactions like that. For instance in the Elden Ring, golem type enemies get disorientated by getting hit with crystal darts and make them turn on their foes, the big poison bulbs are actually instant killed by inflicting poison on them (usually resulting in them killing all their compatriots because they explode in poison gas), invisible enemies you reveal with a special torch, their kind ill like fire for the finger spiders, etc.

If you must be an RPG then the best combat system is Dragon's Dogma but you hire someone who can actually do math to handle the numbers portion of the combat and you give consumables...consuming animations in real time like Monster Hunter.

This. Just because it's RPG, doesn't mean the gameplay can't be flashy, fast-paced and overall fun.

Imo soulslike combat is the best. Skyrim combat is piss-easy and boring, whereas M&B combat feels too clunky and complicated. Soulslike combat is a good middle ground. Enough depth to be engaging while at the same time not too complicated to be a turnoff.

Elden Ring borked it with their shitty ai that gets stuck on rubble and can be distracted with summons. Old games at least where designed with it in mind.
Dragons Dogma has my favorite combat system but even it has its flaws.

The main problem with games that feature angle-of-attack based combat is that they necessitate locking onto an enemy, which means a group fight is basically just a couple 1v1s in a row. See For Honor or KC:D for example. I can't see how you could solve that.
I think the cleavage between simple and arcady hack-n-slashing and "realistic" simulator style combat cannot be mended really. Either you like the former or the latter.

I tried replaying oblivion and the Todd’s dragon game and the combat is so much more boring than I remember so stopped playing after a hour. Fallout vegas is still great though

I kinda get what you're alluding to in that a weapon's moveset is locked and you can't customize beyond that e.g. poking with a weapon with no poke, or doing a slow heavy hit or wide sweep 'on demand' with a weapon that doesn't support it but a lot of weapon choice (assuming you're not just metawhoring and following guides) naturally comes down to picking things that have a moveset with attack arcs and speeds that you are personally comfortable with; I mean why do you think so many people will 'main' a weapon class across multiple games be it quick straight or curved swords, ultras and other 'big slow weapons' to get in a few decisive devastating hits, or something in-between like standard 2hs
even within a sub category you can easily have a lot a variety in if 'this sword' has a crouchpoke, or if the standard moveset is wider or narrower slashes with thrusts mixed in etc...
Souls games have the best combat of any modern real time RPG. By a wide margin even.

You actually can, don't use target lock, aim your camera + character and hold R2. The weapon pivots upwards if you aim your camera up. Some weapons even hit behind your character if you aim it right.
Souls is deep enough I think, most people can't even master these simple mechanics.
