Anniversary edition is a scam if you didn't get it as a free update. Most nexus mods don't work with it and the only thing is adds is community made creation kit stuff.
It's just basically including the Creation Club shit on top of some other minor changes and additions like fishing. It also broke many mods which require updating again.

Fricking, Bethesda, they'll fix an exploit that harms no one but won't fix dozens of quest breaking bugs, nothing but spite would explain such a thing.

There's no graphical change whatsoever, that already happened for the Special Edition compared to the Legendary Edition.

AE has creation club exclusive mods maybe some bug fix stuff (lol). only SE mods that don't work with AE are SKSE dll dependent mods that havent been updated (most were updated), although skyrim just updated so they may all need to be updated again I dunno.
I would go with SE unless there's an AE/CC mod you really want as the NET script framework is pretty invaluable for debugging and there's no AE equivalent so when you have a corrupt mesh you get fricked.

99% of Skyrim mods no longer work and even if you didn't get anniversary, if you updated SE your game is now fricked.
