The Beast has numerous mechanics that only function effectively gameplay-wise if the player is on foot. This includes his signature overhead title-card arc attack. Its melee and spells are designed for a player to close the gap gradually, thus overcoming some degree of challenge to be rewarded with an opportunity to attack (which is a generous attack window, regardless of your shitter tears). Torrent would devalued more or less every mechanical aspect of the fight to the point of utter triviality.

Faith builds have the most damage diversity in the game on top of the percentage based damage weapons and spells, any troubles you face are only a result of stubbornness.

The boss who desperately needed to be fleshed out more was Godfrey. The original Elden Lord just shows up out of nowhere, nobody mentioned he was just wandering around the Lands Between until right at that moment.

You interact with every other character mentioned in that introduction as an NPC and they have a full questline except for Godfrey, yet Godfrey is by far the most significant in terms of the story.
So you meet Godfrey for the first time in that bossfight. Why did you start pissing and shitting about how he comes out of nowhere? Why didn't you cry for over a year about how Gideon is at the Roundtable out of nowhere when you first arrive there? It's the first time you meet him, and according to you, meeting an NPC for the first time means it came out of nowhere
