Sandbox games can have mechanics with some depth to them
Minecraft has very little depth to it's mechanics. You can break blocks, place them, craft shinier looking blocks to place, and thats about it.
The addition of the Nether and Ender dragon shit is very unrewarding because combat is really awful in this game.
Redstone has a ton of depth
Simple, You're supposed to backport to 1.12.2 or 1.7.10 and mod the game

I played a lot of FTB on v1.7 and my favorite thing was getting my thaumcraft level up enough to put straw golems in my base to take care of farming. Even if having a mob try to do it is functionally shittier than other farm methods I just love having minions running around my base doing chores. Has a mod come out since then with an emphasis on this? Or has anyone found a game for this itch?

What's a good survival oriented modpack then? Something that doesn't expect the player to alt+tab a wiki every 10 seconds.
Add few mods at first, you will get used to them.
I haven't tried it myself but FTB Academy is advertised as a modpack with guidance? Might be worth checking out.
Failing that, if you're okay with just focusing on some magic and less fancy tech then Blightfall was pretty good about limiting your options so that you could focus

yeah that is pretty much the problem I have whenever I start a world in Minecraft. Once you get iron armor and a diamond sword you are basically invincible and there is no reason to keep upgrading. what the fuck is the point of potions and enchantments when you never need them? the skeleton of a good game is there but Mojang is retarded and they want to add Bees instead, which serve zero purpose.
adding onto your post, you can literally get diamonds just wandering about in the surface for 30 minutes.

The only thing impressive about minecraft is it's world generation and the fact you can build anything. I almost wish the game itself was an engine to allow for total overhaul mods that really make it a new game instead of having to play buggy modpacks that add a bunch of things that aren't always mechanically consistent

there's no point to being creative, though. building a giant, amazing-looking base has no upside compared to a small one. you can't build automated defenses to keep mobs out, you can't prevent them from spawning inside your base, automation is extremely rudimentary, etc. there's not even any point to building roads around your world because you never need to go anywhere more than once.
if "being able to do anything" with no overarching point was the pinnacle of experiences then why not just doodle shit in mspaint?
This anon gets it. Even Banjo Kazooie: Nuts & Bolts is a better outlet because you can come up with many solutions to certain problems. For Minecraft, there are hardly any problems that need solving. Automating a farm takes a good 10 minutes and then you'll regret removing one of the 3 things you can do besides build structures aimlessly; if the enemies were any smarter and didn't just blitz you after getting within range then it would be a different story. Bandit raids were an okay idea but they simply suck like everything else.
most magic mods solve this issue pretty effortlessly by allowing you to build good looking structures that are functional and vital to progression.

create is extremely based one of the best mods to exist also immersive portals, shit is really cool and you can build trains through the portals
