Fighting against multiple ships at a time is supposed to be challenging but it's doable. FYI, you should not stay in one place and just shoot the enemy ships. You have to maneuver around them and use asteroids as cover.

In fact the perks are a little too impactful, you can't pickpocket, properly stealth, craft, use jetpacks, use or fly practically any advanced ships, and have almost no dialogue alternatives for quests unless you invest in specific perk points.
How do you get around being killed? You just lock in on a ship and fire all your weapons to whittle down their health bar. It's the turkey puncher minigame with missiles and a laser.
use your boost to get behind them, if fighting multiple enemies disable one ships engines then run away to make it 1v1 instead of 1v2, get better guns for your ship, lasers for shields ballistics for hull. Literally just use your brain.

If you need to quick save every five seconds then you're not outsmarting the game.
Its been so long since I've played a vanilla Bethesda game I can't even gauge how much worse this is than their usual shit. Ship combat is easy as fuck though, the only truly essential skill if all you're doing is story stuff is the Targetting skill as it acts like VATS for your ship and slows things down/targets subsystems. Just strip all your weapons and load your ship only with particle weps, as many as you can without going overdrawn on power. EZ.
