Yes, the first few hours are the finest immersive sim experience in over a decade and remaining few hours are good too. It doesn't quite stick the landing though.

While your milage on the ending will vary dont let it detract from the really good game before it. If you liked System Shock 2 odds are great you'll like Prey.
It's really good, but has a huge problem of it being too easy unless you somehow limit yourself when getting upgrades. The ending would definitely bother the casual crowd that wants a "we defeat bad guy and live happily ever after" finale, but I really enjoyed it. I think it played off the rest of the game really well and was pretty unique.

If you find it annoying at first despite liking stereotypical immersive sims like Deus Ex, tough it out for a couple of hours; it clicked for me at that point and I consider it a 7.5/10 or so overall

It's not immersive. It's another action/fps-rpg hybrid.. thing. moment to moment gameplay is enjoyable enough, space is fine, powers are good enough.

Definitely worth it if you like similar games of that sort. The ending isn't a cop-out at all and your decisions matter. It's complicated but it all makes sense.
The Ultima games are simply too dated for almost anyone to enjoy. It's just a fact.
Invisible War for all its flaws is still a decent game buried inside some mediocre gameplay.
Bioshock Infinite isn't even an immersive sim. It's just a run of the mill FPS.
Both HR and MD should be must plays for anyone that likes immersive sims.
Dishonored 2 is just as good as the first game and has some of the best designed levels in all of the genre.
Stalker isn't really an immersive sim, it has elements but it's just not the same because it doesn't really have any RPG elements at all, or real stealth mechanics.

The Prague Hub and the quests there-in. Fantastic fricking level design and kino atmosphere.
I played MD and didn't get past my second visit to the Prague hubzone. Not because the game was bad, but because I got it for cheap and I figured I had gotten my money's worth.

It has some reduced complexity like no grid-based inventory system and weapon degradation but it's not substantially more simple than SS2 when you account for how its RPG elements weren't openly explained with numbers.
Having played the more complex ones like SS and Deus Ex I still overwhelmingly prefer BioShock.

The fact that you left Dishonored and Thief on here shows that even by your own standards you're not applying them equally. STALKER is way more of one than Thief if you're going by the strictest standards.
Why are you even asking the question? There's like what, 15 or so immersive sim games out there, and you're questioning whether you should play one of the best of them? Why? Of course, if you like this type of game, a game that plays like other games of the same genre, you will enjoy it.
