Zelda gets turned into a Chuchu and you spend the game collecting more of her royal slime from clearing dungeons. You can beat the game at any point but doing so without any dungeons makes her regular form very tiny, and doing it with all dungeons + optional quests makes her very large and queenly
More uses for the materials you have, for example being able to repair or forge weapons in a blacksmith. At the end of BotW you had stacks of items and nothing to do with them.
The great faerie upgrade system was pretty good at eating materials up, and I'd like to see an expansion of that. Maybe even show the physical changes to upgraded armor rather than just adding stars on the menu screen.

A big battleaxe slow but big damage would be fun or dual whield weapons for dps.

I wanted to do a hammer run and the idea of elemental weapons was under utilized. An ice hammer that shoots frozen chunks when it makes impact would be awesome. Or like you said, regular weapons with elemental damage rather than a full-on elemental weapon would be nice, too.
I forgot to add something. There needs to be some kind of giga dungeon where you have to beat a certain amount floors with randomly generated assets. Dungeon crawling would really add some replay ability after beating the game.
Make it optional and not required to beat the story but there needs to be a reward like materials that are usual very rare and a chore to obtain in the overworld or blacksmith recipes.

That sounds like something fun to do. One thing open world games tend to do is lean on procedural generated worlds. BotW even did it with the humans using the Mii Maker. BotW with a world 'seed' could have spiced things up tremendously.
BotW as a foundation opens up so many possibilities. TotK reusing the overworld is a damper, it should have been an entirely new world or a world beyond Hyrule. On the other hand, they could do something awesome this time around.

It was not. No dungeons, and despite being the largest gameworld, had the least variety in either enemies or dungeons totaling less than 30 enemy types and less than 15 boss types.

That's one of the more fragile and weak weapons in the endgame. But a better one like a Royal Claymore would probably only go through a couple bokoblins. Durability isn't a big deal but HP bloat with stronger enemies definitely is, especially because stuff like fall damage doesn't scale so the game starts to encourage you to play lame in situations like that. The weapon upgrade system in Age of Calamity wasn't half bad. Combine that with something like the forge system in Dragon Quest XI and ToTK would be set.

But seriously, Zelda was such an innovator when it came to Sword combat in Ocarina of time, but now it's derivatives (like Dark Souls) have clearly surpassed it while Zelda's combat itself is less interesting then its own titles. botw failed as a zelda game and barely has any of the primary reoccurring enemies that have been in the franchise since (or near) the start, literally only having keese and octoroks
the only way totk will succeed in my eyes is if it has more of the franchise long enemies.

there's zero need for a sentry laser turret enemy when the game already has multiple types of it already
