I'm not a zoomer, but I do it when I'm too tired to play anything myself. I don't watch games that I want to play though, it's either games I've already played or games I will never play. I dont want to be spoiled on anything I'm actually interested in.

I only watch LPs of either games I've already played, mainly cause I think it's interesting to see other people's reactions to certain segments, or games I'm on the fence on getting to see what someone who's not a journalist or deep enough into the game to do a walkthrough/guide thinks of it. Helps me decide on a purchase seeing a "normal" person play through the early stages.
Community. Exposure to things that may be outside of your immediate bubble. I get to keep my hands free to work.
Don't watch big streamers though. Find a modest community, and actually talk to people. It's fun.

Average middle class zoomer here, I don't own a computer and don't have tbe money or space for a console or TV. I watch a bunch of let's plays and live vicariously through the players. If I like a game enough I research wikis and imagine how I would play through the game.
If I could play Elden Ring, I'd probably try a dex/faith build with the scimitar. It doesn't have much reach or stagger from what I've seen but the moveset is really stylish.
It's not appeal, its their attention spans. They literally don't have the attention spans to actually play a game for themselves. They need that constant stimulation from someone talking and interacting.
