5, 8 and 11 are all alright starting points. Honestly I'd just say avoid starting with 7 since the game is a massive slow burn and I think you need to already be deep into DQ to enjoy it to the fullest/not get filtered by the slow pacing

The ideal port for SE of every DQ game already exists- the phone port.
DQ1-8 are all already on phones. The primary audience for DQ plays these games on mobile devices.
SE going to multiplatform is for games that would benefit from it. So, FF titles will aim for as many platforms as possible, but DQ has already been meeting expectations and would not reasonably grow if it happened to be on other platforms.

I actually like the 3DS port more, the sped up battles and visible enemies is a huge improvement to me. My ultimate wish is for someone to make a mod for the 3DS that ports the menus from the North American PS2 version complete with spell and item icons across the UI, and the super saiyan full tension model. That would make it my personal definitive version.

Emulate it. You'll never get true 16:9 widescreen, though. Reshade has a cropping filter to stretch it somewhere.
