Mixed attackers who do run mixed sets often do it more out of desperation. If Dragapult had a decent physical Ghost move, I don't think it'd ever go mixed, for example.

Good at mixed attacking, which is what you said, is not the same as a mixed attacker that is actually good, which is what OP asked. So no, saying Nidoking is commonly used as a special attacker isn't relevant, because we're not talking about whos good at mixed attacks. He's a mixed attacker that is good

Nidoking in theory but no Gunk Shot or and no ground Sheer Force boosted option alongside having to rely on the elemental punches as coverage. Soecial just dies better but I can see a 3 special+Gunk shot be a thing.
In general mixed sets work if you have either a sheer BSTs to back them, an ability that boosts both options, or some crazy high Stab options to surprise people.

Tyranitar has been often run as a special attacker in VGC because of the coverage and intimidate

When you say mixed attackers do you mean pokemon with mixed attacking base stats or pokemon set up with both physical and special moves?

Nidoking is well known for it. Very few actual switch hitters though, maybe Wobuffet.

Venusaur can do mixed sets with Growth but it's only options are Power Whip, Earthquake and knockoff while it's Special options are much wider.
Lando with sheer force earth power, rock slide, 2 other moves comes to mind.
