Aside from Warhammer 40k, are there any wargames where you can have conventional forces and mechs face off against each other (without inciting rage from the other player)?

    so not Battletech

The Battletech rules can handle a conventional force going up against a mech force just fine. The Battletech playerbase...can't.

Battletech in not a great game, it's a museum piece, enjoyable as a nostalgia trip or history lesson.
Battletech mechs are now depicted as giant pacific rim sized robots just because it sells more, but they were intended to be 13m max and not that much bigger than a tank.
If everything is a big robot, nothing is a big robot. Most games should have combined arms and mechs should be the cherry on top.
Battletech models are the best they have ever been, even then they are low quality chinese board game models.
Battletech needs a new redesigned and innovative ruleset with proper direction without losing what makes battletech unique, sadly catalyst lacks that kind of skills.

Infinity is one of the best skirmish wargames available, but CB has abandoned the game, models can be too expensive, siocast is rubish and the balance / powercreep during n4 has been terrible.

Damn, I was almost believing you about BattleTech before you said CB had abandoned Infinity even though we get more models than ever.

Combined arms mecha games don't exist, that's just a scifi wargame. A warhammer game might have just as many troops to mechs as a game of combined arms battletech. It's not a mech game then. Maybe if you ruled them as largely abstract, and mechs could instantly remove them from play in base to base, for example.

        So not Battletech

Dark Age era Battletech would be fine. Typical Dark Age forces are a mech piloted by the commander, supported by a few agricultural/industrial converted civilian mechs, some vehicles, and some power armor. Many worlds didn't have any mechs, so you'd have outlaw bands of various factions rolling over them until they encountered a world with maybe one or two mechs. Then it would be the one or two mechs versus whatever beat up pirate mechs the outlaws had.

I can only assume that someone who brings an all-knight army to a game isn't assuming his opponent is also all-knights.

Anyone who brings an all-mech army is gonna be hated by people bringing more conventional forces. Peoole have been hating on Knights armies for as long as they've been in 40K

Given how IK have been off and on in power since they no longer require pure AT forces they can deal with it.

And you can deal with conventional forces in BT, but it doesn't change the fact that a lot of the playerbase hates it. OP specifically asked
            >without inciting rage from the other player

It doesn't matter if they're manageable if they're an unfun slog to face.

Heavy Gear Blitz, least for ones with even the slightest of noticeable of presences in the community.

To add to Battletech and Heavy Gear, there's technically also Infinity. All though genre purist will say they're battle/exo suits, Votoms counts as mechs so IMO this also counts.

Battletech players get extremely angry if you bring too many conventional forces.

Only if you're memeing (field AC/5s for days, Savanah Master swarms, etc.) or playing with tourneygays (no reason to do this).

Conventional forces work fine in Battletech so long as neither player is deliberately being an butthole.

Those are pretty obnoxious cheese lists. But some battle armor, apcs, and specialist vehicles like missile carriers, Schrecks, and Demolishers make most games more fun.

Infinity has mechs (Tactical Armoured Gears or TAGs) alongside regular infantry, this is one of its drawcards.

Going back a bit, but Dirtside 2. They're essentially treated as just a fancy form of AFV though, so if you want the mechs to be gods it's probably not ideal for you.
