For me, it's Soilwork. Over time my taste shifted around from Symphony X and Dream Theater which got me into music (hated everything on the radio I heard), to various Power Metal bands and eventually to a particular subsection of Melodeath that only Soilwork and Scar Symmetry/Solution .45 hit. There are a few Inflames songs that hit, but it's really hard to find anything else that has the same feel, I can't really describe it.
I listen to the same bands you listed.Scar Symmetry was great until Christian Alvestam left. A good vocalist makes or breaks a band for me most of the time.
As for In Flames, I found most of their albums after Come Clarity just stopped resonating with me, for whatever reason.
Star One has some brilliant tracks, but they're a bit more hit or miss for me. That said, the alternate version of Prescient might be my favorite track of that.

Metal is fricking dead as frick. It's basically the new dad rock, only boomers listen to it these days. The only subgenre that get any amount of mainstream traction is metalcore, and even most of that now sounds like electro pop.
