most power metal is shit. the only good power metal band was sonata arctica, but then they decided they didn't want to make metal anymore. their new album is kind of okay though.
For me, it's Soilwork. Over time my taste shifted around from Symphony X and Dream Theater which got me into music (hated everything on the radio I heard), to various Power Metal bands and eventually to a particular subsection of Melodeath that only Soilwork and Scar Symmetry/Solution .45 hit. There are a few Inflames songs that hit, but it's really hard to find anything else that has the same feel, I can't really describe it.
I listen to the same bands you listed.Scar Symmetry was great until Christian Alvestam left. A good vocalist makes or breaks a band for me most of the time.
As for In Flames, I found most of their albums after Come Clarity just stopped resonating with me, for whatever reason.

Ayreon is nice but I prefer Star One.
Star One has some brilliant tracks, but they're a bit more hit or miss for me. That said, the alternate version of Prescient might be my favorite track of that.

Disciples of the Sun wasn't bad, best of the new albums by a large margin. It's just the albums that came after only had a few songs I was really into. It's also just not the same feeling as Melancholy Beast or Bonecraver, I really feel like those two albums were magical. Year of the Phoenix had Matt Barlow and some really fun lyrical themes.

I used to like metal when I was in my teens and early 20s but as I got older I stopped feeling anything from it, and most metal is basically slop that can induce an emotional response if you're susceptible to it. If you lose the emotional response, there's really nothing there.
