It's because (circumstances). The reason GAA2 is so condensed is because it does nothing extraneous due to budget. 2-1 to wrap Susato/Japanese affairs and establish Jigger, 2-2 to wrap the two npcs from 1 and expand on Baskerville plotpoint, 2-3 to 2-5 is a crammed rollercoaster of plot points of one game crammed into a half.
Bullshit. Takumi intended to make only one game but realized he kept adding too much stuff to the story, not to mention the fan feedback after DGS1. So he was forced to split up the hints and the expositions and then some more fanservice to the supporting cast.
There are a lot of things to expand. Japan cases, 10-y.o. stuff, so on.
Because the fans want to see more of their favorite characters.
Agree, the games tied up most of the loose ends that they left behind intentionally. But, there's still things left to explore.

Obviously. Even as a massive Barok simp, I'm entirely sure that he can't carry a whole game on his own writing wise so he has to be the target of clownery from everyone else while still being the protagonist because he's competent, just like how it is with Edgeworth dealing with Kay's schizophrenia, Gumshoe's goofiness, and the occasional von Karma seething.

With his leg. There was a scene when Ryu and co visited vZ's office and he said something that pissed vZ off hard enough for him to ruin his desk, but it was cut early in development. There are some remnants of it in the artbook and game files.
Except Edgeworth is not that boring compared to Barok but sure. We can even have two routes to gather all the clues for the final case: one for the police investigation and one for the freelance investigation.
