Here's most of my modlist after 73 hours I think there might be some that don't show up here though. I started modding almost from the getgo because of how much griping I saw with the combat so I'm not sure how vanilla is.

cant say for combat but there was a great performance mod back in the day but the author took it down from nexus and everywhere else
it was called optimized graphics presets and you needed a modified flowgraph hook for it
0 visual downgrades and almost doubled fps with cpu usage going down - compared to vanilla it was a 90 fps vs 155 fps diff and the lod got a bit better.

I played for about 40 hours vanilla until the charm started to wear off and I eventually stopped playing, I think the combat was a big part of that. I even tried watching some videos to see if I was missing anything but I wasn't. The whole concept of feints and stances allowing you to catch enemies off-guard doesn't seem to work at all.
The game would have been better with Morrowind combat
You really just grind your skills up then annihilate everyone but hitting a combo on them as quickly as possible
it just feels like you are locked behind unnecessary animations.

I always figured it was to simulate the stress you'd experience. Obviously your vision wouldn't shake like that but it's just how they conveyed it I guess.
I would play for a few hours and find the things that annoy you the most about the game and see if there are mods to fix it.
Just save unlimited saves mod, ironman or limited save systems have their time and place but open world rpg is not one of them.
The only mod you need is the save mod.
Just play vanilla and then mod the quirks out that you can't handle like not needing an item to save. Is honestly one of my favorite games ever. Do the combat tutorials, and practice a little bit to get your skills up. You start as a nobody and the game likes to make that point very clear. It is the source of a lot of filtering/seething from normalgays who want bing wahoo

This game's combat is 80% stat-checks and at that point his are better than yours, if you don't already know how to abuse the combat system or aren't willing to endlessly savescum it's probably not going to happen.
I did it by completing the quest of helping my friends throw shit at a German's house, then they helped me beat the shit outta him.

When you exit the conversation with him immediately use heavy swings. After he’s done staggering keep backing up and throwing quick strikes at him. I just did this on hardcore and won.

You can change the FOV with the console command. Also look up other console commands, like recital for the bow
