Is there any benefit to NOT turning the MC into a Sage? I always assumed it was a straight upgrade path, but I never knew for sure (I like the default Warrior aesthetic).
You can't change the Hero's job
It's viable to go from Sage back to something else because they keep all the learned spells and half their max MP even if the new job doesn't gain any more MP, but that's a bunch of extra grinding you don't need to do to finish the game. Unless they ramp EXP gains way up you'll probably just barely get the last few spells before the final boss.
Its the order the story goes in but gameplay wise going from 3 back to 1 and 2 is rough
DQ1 is short so its not a big deal, but even without time spent getting lost or game overing a thousand times in Rhone, DQ2 isn't that much shorter than 3 but your party is way more basic.

In the gameplay department overall exploring the world and dungeons feels rewarding and leveling up feels like a milestone. I don't know how else to explain it but finding a new weapon or leveling up is rewarding because it really feels like the character is actually getting stronger. Maybe it's because it's so simple but it pulls off the simplicity well.
My only real wish is that it has new game+ so I can do a solo run followed by a full party run but keep my maxxed out MC levels.

Had a Thief/Mage/Priest party and turned the Thief and Mage into Sages before the end.
You can't make the mc a sage. Only the clown/bunny girl, priest and mage can turn into one.
IIRC my final party was Hero, 2 sages and another melee attacker
