Every area I go to is full of monsters way above my level.
I dropped down a well in LITERALLY THE STARTING VILLAGE for some random sidequest- then the giant jumping lizards ate me alive.
It looks like you're still using rusted daggers, the starting village has a shop that sells proper weapons. This isn't a Ubisoft game, you have to explore yourself to find things.
Grinding doesn't matter much. Buy better weapons, upgrade weapons, change party composition, or change your tactics. For an example, the saurians in the well are easy as shit if you just cut their tails.

The bandits in the area beyond that hill are stronger than what you're expected to handle at your level. Either do as says and book it into the forest past them or turn back and return later. Consider sticking to the main quest for a bit, since that'll give you plenty of opportunity to get xp. Also mouse + keyboard can be a little clunky since the game was designed around the PS3. MKB works fine - I've beaten the game a few times and I've only ever used MKB - but there's no denying that it's not the smoothest way to play. You can make it work, though.

No, this is still the same, that path to the forest is extremely difficult due to the bandits being very strong, but you can defeat them if you git gud, if not, just go at night and there will be wolves instead.

Party compositions important to play to the class you want. Your a strider. You need a tank. You got two mages so they're going to run away to cast and the bandits are just going to gank you. I recommend 2 sword and board guys to soak up damage while you run around shooting and stabbing everything and the mage just buffs. Go back to the camp and switch your pawns out you'll have a better time.
Deliver the hydra head so you can get in the city and get upgrades to weapons and buy new skills. Then you can kinda do whatever you want quest wise.
Those bandits are the Tree Sentinel™ of Dragon's Dogma, run past them.
Any recommended [playthrough] of this game? I tried it but got bored at some point, want to see if some other builds are more fun or maybe I'm missing something.

Dragon's Dogma's map is actually really small compared to even its contemporaries. It uses traversal and lack of traditional fast travel to feel big rather than literal size.
If you explore and get your shit pushed in, just go somewhere else - if you pay attention at all you will get plenty of side quests that will have threads to pull on that lead you to optional areas.

throw Rook off a cliff and hire 2 other pawns, you already have a mage as your main pawn so i'd suggest you one fighter and one warrior

that's the quest to reach gran soren (the main city) as soon as you reached it you can go back to Cassardis and finish the side quest
i warn though you it's the most boring quest of the game, the rest is kino (and kick the ox, you will understand once you're in the quest)
but first kick Rook out like i said
